Ingredients (Serves 4)
- 4 Nori Sheets
- 3 cups Sushi Rice (uncooked)
- 1¼ cup Rice Vinegar
- 2 tablespoons Sugar
- 1 teaspoon Salt
- 6 ounces Imitation Crab Meat, shredded
- 2 Avocados, sliced thinly
- ½ Cucumber, peeled and sliced into thin strips
- 1 tablespoon Sesame Seeds, toasted
- Vegetable Oil for brushing the sushi mat (optional)
- Warm Water for moistening hands (approximately 110°F)
Method
1. Begin by preparing the sushi rice. Rinse the uncooked sushi rice until the water runs clear. Place the rice in a medium saucepan with 2 cups of water and bring to a boil.
Reduce heat to low and simmer, covered, for 15 minutes or until all of the water has been absorbed by the rice. Remove pan from heat and let stand, still covered, for 10 minutes.
2. While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar and salt have dissolved. Pour this mixture over the cooked sushi rice and mix it together using a wooden spoon or spatula.
3. To assemble the California rolls, lay a nori sheet on a sushi mat or clean work surface. Wet your hands with warm water and spread ½ cup of the prepared sushi rice evenly over the nori sheet. Sprinkle sesame seeds over top of the sushi rice.
4. Turn the nori sheet upside down so that the sushi rice is facing down on your work surface. Arrange a line of imitation crab meat, avocado slices, and cucumber strips across the middle of the nori sheet.
Starting at one end of your line of ingredients, use your fingers and thumbs to roll up all of the ingredients in the nori sheet.
5. Brush some vegetable oil onto your hands to prevent sticking if needed, then use both hands to press together firmly on either end of your sushi roll to seal it shut. Slice into 8 even pieces using a very sharp knife.
6. Continue rolling your California rolls until you have used up all of your nori sheets and ingredients.
7. Serve immediately with soy sauce for dipping.
