Method
- Rinse the black-eyed peas and soak them in water for at least 8 hours or overnight.
- In a large pot, add the soaked peas, water, and the ham hock. Bring to a boil over medium-high heat (around 200°F/93°C).
- Once boiling, reduce the heat to low (around 140°F/60°C), cover the pot and let it simmer for about an hour.
- After an hour, add the chopped onion, minced garlic, chopped red and green bell peppers, salt, black pepper, and cayenne pepper to the pot.
- Stir well, then add the chicken broth and bay leaves.
- Bring the mixture back to a boil, then reduce the heat to low, cover, and let it simmer for another hour or until the peas are tender.
- Once the peas are cooked, remove the ham hock from the pot. Remove the meat from the bone, chop it, and return it to the pot.
