Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts (1 lb total)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 large eggs
- 1 head romaine lettuce (4 cups chopped)
- 4 slices bacon
- 1 avocado, pitted and diced
- 1/2 cup crumbled blue cheese
- 1/2 cup diced cooked ham
- 3 tomatoes, diced
- 1/4 cup red onion, sliced thinly
- 2 tablespoons white wine vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1/3 cup olive oil
- Salt and pepper to taste
Method
1. Start by prepping the ingredients. Hard boil 4 eggs, cut into wedges; dice the ham; crumble the bacon and blue cheese; and dice the avocado, tomato and cucumber. Place each prepared ingredient in its own bowl.
2. Make the dressing. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt and pepper until fully combined.
3. Assemble the salad. In a large bowl combine the lettuce leaves, egg wedges, ham, bacon, blue cheese, avocado, tomato and cucumber. Drizzle with the dressing and toss to combine.
4. Serve the salad with croutons on top.

The origin of the Cobb Salad
The Cobb Salad is an American classic, a combination of lettuce, avocado, bacon, eggs, tomato, and chicken. It was created in 1937 by Robert Cobb, the owner of the Hollywood Brown Derby restaurant. Legend has it that Cobb created the salad after rummaging through the kitchen for a snack one late night. He combined all of the ingredients he could find and the Cobb Salad was born!
