Ingredients (Serves 4)

  • 1 (9-inch) prebaked pie crust
  • 1 cup granulated sugar
  • 4 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks, lightly beaten
  • 3 tablespoons butter
  • 1/2 cup freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest
  • 3 large egg whites, at room temperature
  • 6 tablespoons granulated sugar
  • Garnish: (Optional) Whipped Cream:
    • 1/2 cup heavy cream, chilled
    • 2 tablespoons granulated sugar

Method

1. Preheat oven to 375 degrees F (190 degrees C). Place prebaked pie crust in 9-inch pie plate.

2. In a medium saucepan, combine 1 cup granulated sugar, cornstarch, flour and salt. Gradually stir in water and egg yolks. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil for 1 minute. Remove from heat and stir in butter, lemon juice and zest. Allow to cool for 5 minutes.

3. Pour lemon filling into prepared pie crust and spread evenly.

4. In a medium bowl, beat egg whites until foamy. Gradually add 6 tablespoons sugar, beating until stiff peaks form. Spread meringue over top of pie, sealing to the edge of the crust.

5. Bake in preheated oven for 10 minutes or until meringue is golden brown.

(Optional) Whipped Cream:

1. In a medium bowl, beat cream until it begins to thicken. Gradually add 2 tablespoons sugar and continue beating until soft peaks form.
