Ingredients
- 1 Onion, diced
- 2 Celery Stalks, diced

- 1/4 teaspoon Dried Thyme
- 1/4 teaspoon Cayenne Pepper
- 2 cups Chicken Broth
- 2 cups Shrimp, peeled and deveined
- 1 lb Andouille Sausage, sliced
- Salt and Pepper to taste
Method
1. Heat a large saucepan over medium heat. Add the onion, celery and garlic. Cook for 3 minutes or until the vegetables are softened.
2. Stir in the bell pepper and rice and cook for 2 minutes. Add the oregano, thyme and cayenne pepper. Pour in the chicken broth and bring to a simmer.
3. Reduce heat to low and cover the pan. Simmer for 20 minutes, or until the rice is cooked through.
4. Add the shrimp, sausage and season with salt and pepper to taste. Cook for 5 minutes or until shrimp is cooked through and sausage is heated through.
