Ingredients
- 8 ounces (225 grams) of spaghetti
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 8 ounces (225 grams) Swiss chard, stems and leaves separated and chopped
- 8 ounces (225 grams) of mushrooms, sliced
- 1/2 cup (120 milliliters) of chicken or vegetable broth
- Salt and pepper to taste
- 1/2 cup (50 grams) of grated Parmesan cheese

Method
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, or according to the package instructions. Drain the pasta, reserving 1 cup of the pasta water, and set aside.
- In a large frying pan, heat the olive oil over medium heat (around 180°C/350°F). Add the garlic and onion, and sauté until the onion is soft and translucent.
- Add the Swiss chard stems to the pan and cook for about 2 minutes. Then, add the leaves and continue to cook until they are wilted.
- Add the mushrooms to the pan and cook until they are browned and tender.
- Stir in the broth and bring the mixture to a simmer. Season with salt and pepper to taste.
- Add the cooked spaghetti to the pan and toss to combine. If necessary, add some of the reserved pasta water to loosen the sauce.
- Divide the pasta between four plates, and sprinkle the Parmesan cheese evenly over the top before serving.
