Ingredients (Serves 4)
- 1 (3-4 pound) chuck roast
- 1 teaspoon of salt
- 1 teaspoon of ground pepper
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, peeled and cut into chunks
- 3 stalks of celery, cut into chunks
- 2 cups of beef broth
- 1 tablespoon of Worcestershire sauce
- 2 bay leaves
- 1 sprig of fresh rosemary
Method
1. Preheat the oven to 250 degrees Fahrenheit.
2. Rub the outside of the pot roast with oil, then season with salt and pepper.
3. Heat a large skillet over medium-high heat, add a tablespoon of oil then add the pot roast and sear until golden brown on both sides, about 4 minutes per side.
4. Place the pot roast in a roasting pan and add 1/2 cup of beef broth and 1/2 cup of red wine to the pan.
5. Add 1 onion, 2 carrots, 2 celery stalks, 1 garlic clove (minced) and 1 sprig of fresh rosemary to the roasting pan.
6. Cover the roasting pan with aluminum foil and place in preheated oven for 3 hours.
7. After 3 hours, remove the foil and increase oven temperature to 350 degrees Fahrenheit for another hour or until internal temperature of pot roast is 165 degrees Fahrenheit.
8. Remove from oven and let rest for 10-15 minutes before serving.
