Ingredients (Serves 4)

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1/2 cup white wine
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1/2 pound bay scallops
  • 1/2 pound mussels, scrubbed and debearded
  • 3 tablespoons chopped fresh parsley leaves

Method

1. Bring a large pot of salted water to a boil over high heat. Add the linguine and cook until al dente, about 8 minutes.

2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the oregano, salt, black pepper and red pepper flakes.

3. Add the tomatoes, tomato paste and white wine to the skillet and bring to a simmer. Simmer for 10 minutes, stirring occasionally.

4. Add the shrimp, scallops and mussels to the skillet and stir to combine. Simmer until the seafood is cooked through and the mussels have opened, about 8 minutes.

5. Drain the linguine and add it to the skillet with the seafood sauce. Toss gently to combine then sprinkle with parsley before serving.
