Ingredients (Serves 4)
- 2 cups of mixed salad greens (around 60g)
- 1 medium apple, cored and chopped (around 180g)
- 1/2 cup of pomegranate seeds (around 87g)
- 1/4 cup of chopped walnuts (around 30g)
- 1/4 cup of crumbled blue cheese (around 28g)
- 1 medium carrot, shredded (around 61g)
- For Pomegranate Vinaigrette:
- 1/4 cup of pomegranate juice (around 60ml)
- 2 tablespoons of olive oil (around 30ml)
- 1 tablespoon of apple cider vinegar (around 15ml)
- 1 teaspoon of honey (around 7g)
- Salt and pepper to taste
Method
- Start by preparing the pomegranate vinaigrette. In a small bowl, whisk together the pomegranate juice, olive oil, apple cider vinegar, honey, salt, and pepper. Set this aside for later.
- In a separate, much larger bowl, combine all salad ingredients: the salad greens, chopped apple, pomegranate seeds, chopped walnuts, crumbled blue cheese, and shredded carrot.
- Now, it’s time to combine all the elements. Drizzle the pomegranate vinaigrette over the salad. Toss the mixture gently but thoroughly. Make sure each ingredient is coated with the vinaigrette.
