The history of meatloaf
Meatloaf has its origins in ancient Rome, where it was known as ‘isicia omentata’. It was a mixture of ground pork, pepper, pine nuts, and various spices, all wrapped in a caul fat and cooked.
The dish made its way to Germany in the Middle Ages, where it was referred to as ‘laeberkloese’ or ‘liver cheese’. From there it made its way to England, where it was referred to as ‘meatloaf’ or ‘meat paste’.
It was a favorite of the working class, and was made with various combinations of beef, pork, and other meats.
