Hearty November chicken stew
Ingredients (Serves 4)
- 1 lb (approx 450 g) boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced into rounds
- 2 stalks celery, sliced
- 1 lb (approx 450 g) potatoes, peeled and diced
- 1 can (approx 400 g) diced tomatoes
- 4 cups (approx 950 ml) chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Method
- Heat 1 tablespoon of olive oil in a large pot over a medium heat (180°C/350°F).
- Add the diced chicken to the pot and season with salt and pepper. Cook until the chicken is browned and no longer pink in the center. Remove the chicken from the pot and set aside.
- With the same pot, heat the remaining tablespoon of olive oil. Add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
- Add the diced potatoes, canned tomatoes, chicken broth, thyme, and rosemary to the pot. Stir well to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 20 minutes.
- Return the cooked chicken to the pot and stir well. Continue to simmer the stew for an additional 10 minutes, allowing the flavors to meld together.
