Ingredients (Serves 4)
- 1 pound of breakfast sausage
- 4 tablespoons of butter
- 4 tablespoons of all-purpose flour
- 2 cups of milk
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 2 tablespoons of chopped fresh parsley
- Homemade Biscuits (recipe follows) :
- 2 cups of all purpose flour
- 3 teaspoons baking powder
- Â teaspoon salt
- 1/4 cup shortening or butter, melted and cooled slightly
- 3/4 cup milk
Method
1. Prepare the homemade biscuits according to the recipe below :
a) Preheate the oven to 425 degrees Fahrenheit.
b) In a large bowl, whisk together the flour, baking powder, and salt.
c) Cut in the shortening or butter into the dry ingredients until it resembles coarse crumbs.
d) Gradually add the milk to the mixture and stir until it forms a soft dough.
e) Turn the dough onto a lightly floured surface and knead for about 1 minute.
f) Roll out the dough to about 1/2 inch thick and use a biscuit cutter to cut out circles of dough.
g) Place the biscuits onto an ungreased baking sheet and bake in preheated oven for 12-15 minutes or until golden brown.
2. Meanwhile, in a large skillet cook breakfast sausage over medium heat until browned and cooked through. Remove from heat and set aside.
3. In the same skillet melt butter over medium heat. Add flour to the melted butter, stirring to form a paste. Cook for 1 minute, stirring constantly.
4. Gradually add in the milk, whisking until no lumps remain. Increase heat to medium high and bring mixture to a boil, stirring constantly. Boil for 1 minute then reduce heat to low and simmer for 5 minutes or until thickened.
5. Add the cooked sausage back into the skillet along with pepper, salt, and parsley and stir to combine. Simmer for an additional 2 minutes or until heated through.
6. Serve sausage gravy over warm homemade biscuits and enjoy!
